Whiskey Bacon Chicken Skewers

Your guests' mouths will water at just the name of these scrumptious skewers. Made with layers of chicken and bacon tossed in a spiced bacon sauce and basted with lots of whiskey barbecue sauce, Whiskey Bacon Chicken Skewers won't last long on the table. These skewers could be a tantalizing appetizer at your next potluck dinner, or pack a container of skewers to take with you to the game to pop on the grill once you get to the tailgate.

Whiskey Bacon Chicken Skewers

  • 1 bottle whiskey-flavored BBQ sauce

  • 2 teaspoons kosher salt

  • 4 tablespoons dark brown sugar

  • 1 teaspoon chili powder

  • 1 tablespoon paprika

  • 1 teaspoon chopped garlic

  • 2 teaspoons chopped onion

  • 4 slices center-cut bacon, chopped; plus 3 whole slices

  • 2 lbs. boneless, skinless chicken thighs, cut into bite-size pieces

  • Wooden skewers

Put wooden skewers in a shallow pan to soak in water for at least 30 minutes. Put three whole slices bacon in the microwave for one minute. Cut into ½-inch slices.

Combine salt, brown sugar, chili powder, paprika, garlic, onion, and 4 chopped slices of bacon in a food processor until smooth and forms a paste.

Heat grill pan on medium-high heat. Toss chicken thighs in bacon puree until evenly coated. Thread chicken onto wooden skewers, alternating with par-cooked bacon slices, after every three or four pieces of chicken.

Put skewers on grill to cook for about five minutes. Brush with BBQ sauce; turn, and brush once more with sauce. Grill until cooked through, rotating skewers as needed, about 10 more minutes. Remove skewers from grill, and brush with additional BBQ sauce.
