Shucking oysters is a simple, two-step process that takes seconds to accomplish. From there, your favorite seafood dish will be right at your fingertips.
Hold the oyster in the palm of your hand with an oven mitt to prevent cutting yourself, positioning the oyster so that the curved side of the shell faces down and the flat side faces up. Insert a paring or oyster knife between the shells, near the hinge. Twist the knife to detach the muscle.
Remove the top shell and use the knife to take the oyster meat out of the bottom shell.
