I'm going to show you the easiest way to shape even uniform rolls and loaves. To shape rolls, pinch off a piece of the dough like this. And we're going to just gently start folding the dough under itself until you've got really nice little roll, about the size of golf ball, then we'll put that in a pan, and then we just keep repeating that. To shape a loaf, we're gonna turn our bread dough out onto the pastry mat, and I like to press it out. I'm going to finish it off with the rolling pin and dust it with just a little bit of flour to keep it from sticking. And we're gonna take this to about 18 inches long by 9 inches wide, and you don't have to worry about it being a perfect rectangle. We're gonna start at the short end and we're gonna begin rolling our bread. Do it as tight as you can. Pinch the bottom the same, like so. Then we're gonna pinch the top and just tuck it under so that it will fit into our bread pan. We're gonna place it same side down. Cover it with plastic wrap and let it go through the second rise.
