Flavor budget-friendly tilapia fillets with Cajun (or Creole) seasoning, dredge in flour and cornmeal, and pan fry for a quick-cooking weeknight meal.
Sprinkle fish with seasoning. Combine remaining seasoning, self-rising flour, and cornmeal. Dredge fish in mixture, and shake off excess.
Melt butter with oil in a large skillet over medium-high heat. (Oil burns at a higher heat than butter, so combining the two prevents the butter from burning.)
Add fish to pan. Cook 3 to 4 minutes on each side or until fish flakes with a fork.
