Instead of settling for store-bought mayonnaise, learn how to make it homemade in three quick and easy steps
Combine 3 pasteurized egg yolks, 1 Tbsp. Dijon mustard, and 2 Tbsp. lemon juice or vinegar in a small bowl and beat until smooth.
Slowly pour 1 tsp. of oil at a time down the side of the bowl and beat into the egg mixture. Continue until 2 1/4 cups olive oil have been added.
When the mayonnaise stiffens slightly, add the oil more quickly, about 1 Tbsp. at a time. Continue until mayonnaise is stiff.
