Your sweet tooth will find few complaints with this colorful Birthday Cake Fudge. It's made with white chocolate chips, rainbow cake batter mix, and, of course, extra sprinkles. We love the idea of bringing a double batch to your next picnic or summer party, or try wrapping up a pan of the fudge to give as a fun and unexpected hostess gift.Birthday Cake Fudge2 cups sugar⅔ cup milk1 tablespoon corn syrup1/4 teaspoon salt3 tablespoons butter1 teaspoon vanilla extract½ cup rainbow chip cake mix½ cup white chocolate chips2 tablespoons rainbow sprinkles

Stir together sugar, milk, corn syrup, and salt in a 2-quart saucepan. Bring mixture to a boil over medium-high heat, and cook until a candy thermometer registers 240°F. Remove mixture from heat; add butter, cake mix, and ½ cup white chocolate chips and let melt (do not stir). Let cool 10 to 15 minutes or until pan is cool to the touch. Stir in vanilla.

Beat mixture with an electric mixer at high speed for 1 minute, and then low speed for one minute more (or until mixture begins to lose its gloss).

Stir in 1 tablespoon sprinkles. Working quickly, pour fudge into a buttered dish. Press evenly into pan with hands, pushing fudge to the edges. Top with 1 additional tablespoon sprinkles and press lightly into pan with hands. Let cool for 30 minutes, then slice.
