Healthy Banana Split Nachos

These Banana Split "Nachos" are a fantastic after-school snack idea, and they're packed with protein, fiber, and fruit. Assemble some sliced banana, peanut butter (or almond butter, if desired), chopped pecans, some flax seed, shaved chocolate, fresh cherries, and a little whipped cream for a snack that kids will love. We'd also recommend as a brunch dish for special occasions.

Hi everybody, I'm Holley from Holley Grainger Nutrition. I'm a registered dietician and mom to two little girls and I love to provide simple and healthy recipe solutions for busy families. Today I wanna show you how to make my super easy banana split nachos. These are a favorite of Ellie and Frances. They're perfect for breakfast, and also double as a healthy dessert. All you have to do to get started is, slice your banana into chips, and I like to use a banana that's just a little bit under ripe. That way, it's easier to pick up with your fingers. I like cutting on the diagonal, when possible. It makes it just a little bit easier to pick up the banana chips Although I will say these get a little bit messy so sometimes it does require a fork. Drizzle the banana slices with peanut butter. And I like using an all natural peanut butter that just peanuts and salt, no need for added sugar. You can also use almond butter if you prefer. Sprinkle with some chopped pecans. This adds just a little bit of texture, as well as some fiber, healthy fat, and protein. And then one ingredient that I like to sneak into these nachos is some ground flaxseed. Ground flaxseeds add fiber, heart healthy omega-3 fatty acids And some healthy fat. It also gives you a boost of protein. And the girls don't seem to know the difference because they think it's shaved chocolate. So next I like to just use some chocolate and we'll shave it right on to the nachos. So as you can see, you can't tell the difference between the flaxseed or the chocolate and that's what makes this a healthy option for either breakfast or a dessert. Then I'll add some fresh cherries. This is what makes it banana split. And then of course, I would be remiss if I didn't add a little bit of whipped cream. And of course, that's their favorite. So, might as well make it a little bit fun. Finally, I like to add just a little bit more chocolate onto that whipped cream. And finish it off with a cherry. Simple, easy and perfect for breakfast or dessert. I know it's one of those recipes that your family will love.
