User Review: "As someone who was "born on the Bayou" (St. Martinville, LA) I would say that this dish is 100% authentic Cajun cuisine. Cajun food is supposed to be "seasoned" and not "spicy" - and there is a huge difference between the two. If you are looking for more flavor you may try adding 1/4 cup or so of chopped green onions. Otherwise, this dish was c'est magnifique!" --Karly
