Recipe: New Ambrosia
If you love the idea of a classic Ambrosia salad without the mini marshmallows, then this New Ambrosia is the salad for you. Our updated version uses fresh citrus, celery, cucumber, and avocados, then adds a seeded and minced jalapeño pepper for a hint of spice. Serve this fantastic salad on a bed of fresh arugula. Sprinkle toasted sweetened flaked coconut over each serving, if desired. It is dressed with a homemade Buttermilk-Coconut Dressing, but the extra toasted flakes will kick it up a notch. This recipe is a fresh way to use holiday citrus, and is a great new twist on an old holiday classic.
