Recipe: Banana Pudding Cheesecake

To begin, simply preheat your oven to 350 degrees, and stir together the first three ingredients in a small bowl until they are well blended. Next, press the mixture onto the bottom of a greased and floured pan. Stand 17 vanilla wafers around the edge of the pan by pressing them gently into the crust – this will give you a decorative flourish. The trick is to place the rounded side of the vanilla wafer against the pan. Bake the crust for 10 minutes, and wait for it to cool completely on a wire rack. It should take about 30 minutes. After that, combine your bananas and lemon juice in a small saucepan while stirring in the brown sugar. Be sure to cook the mixture on medium-high heat for about 1 minute, or until the sugar has dissolved. Then, beat the cream cheese at a medium speed with an electric mixer for about 3 minutes.
