How To Make Breakfast Nachos

Who wouldn't want a plate of cheesy, hearty nachos for breakfast? Logan Junior Chef of Memphis, Tennessee is the winner of our Best Southern Cook competition. These Breakfast Nachos, one of Logan's specialities, are a simple dish for a kid-friendly brunch. They're made with tortilla chips, warm scrambled eggs, creamy Cheddar cheese, crispy bacon, petite diced ham, fresh pico, and, of course, cheese sauce. If you've got picky eaters (or, if you're hosting new guests), try making a Breakfast Nacho "bar," where each person can choose their favorite toppings to customize their nachos.

Logan Junior Chef's Breakfast Nachos

5 cups corn tortilla chips
1/2 cup shredded Cheddar cheese
2 eggs
3 slices bacon, fried until crispy
1/4 cup petite diced ham
3 tablespoons fresh pico sauce
4 tablespoons cheese dip/sauce of choice

Put the tortilla chips on a baking tray, cover with cheese, and then melt in the oven. Scramble the two eggs and cook. Crumble bacon. Top your nachos with the eggs, bacon, ham, and pico. Finish with cheese dip.


Hi, Logan Junior Chef here and I am making breakfast nachos. The first thing I'm gonna do is I'm gonna sprinkle my cheese onto my nachos and I'm gonna put these in the oven to melt. I'm gonna scramble my eggs now while my Cheese is melting. Pour them in frying pan. Start scrambling. You can do them a little bit runnier if you want. You can do them a bit more cooked if you want. They might stick a little bit, but just scrape them off. There we go. We scrambled our eggs. We can check on our melted cheese. Now that our cheese is melted on our nachos, we can get ready to start assembling it. This is where you get to put on all of your favorite stuff. Your scrambled eggs, fresh pico de gallo, ham bits. And of course, some bacon. You can't go wrong with bacon. And lastly, and most importantly, the cheese sauce. We have completed our breakfast nachos. [APPLAUSE] And I really can't wait to try one I guess I'm gonna go for it. It tastes so good I mean I got cheese dip and the bacon and the ham and the egg. Of course a little bit of freshness that the pico has, these breakfast nachos are great for any gathering of friends, brunch, so enjoy. [MUSIC]
