Finding the perfect flour for making bread depends on the flavors you love and the tastes you prefer: whole grain, white, wheat, gluten-free, and more.

If you're cooking gluten-free, you will want to work with whole-grain flours like spelt, oat, sorghum, or brown rice. Like our Test Kitchen explains, the other issue to consider is that hard wheat is great for making breads, while soft wheat is great for biscuits: combine the two, and you have all-purpose flour.
