Finding the perfect flour for making bread depends on the flavors you love and the tastes you prefer: whole grain, white, wheat, gluten-free, and more.
You can even create your own special-purpose flours at home: we've got a recipe for Homemade Self-Rising Cornmeal Flour that combines all-purpose flour, cornmeal, baking powder, and salt. If you're cooking gluten-free, you will want to work with whole-grain flours like spelt, oat, sorghum, or brown rice. Like our Test Kitchen explains, the other issue to consider is that hard wheat is great for making breads, while soft wheat is great for biscuits: combine the two, and you have all-purpose flour. You may even use self-rising flour in some bread recipes: our Sweet Beer Bread is a case in point. So before you grab that bag of flour off the shelf, be sure it is the one you want to make the bread you need, or at least the bread you love.
