Packed with protein, beans are one of our favorite foods.
We love the fact that this is one vegetable that you can easily take from garden to table, so if you want to truly eat local, beans make a great choice. Over the years at Southern Living we've shared a number of our favorite green bean recipes, as well as recipes for any other number of beans: baked beans, red beans, cannellini beans, the list is long, and the results are delicious. Southerners love beans so much that they've even given certain dishes special names, turning black-eyed peas into "Texas caviar" and developing their own name—butter beans—for what are also known as Lima beans.
Beans are also the foundation for any number of dishes, from black beans for Mexican dishes like chimichangas to white beans as a staple for warm and hearty winter pots of chili.
