Mini Cheeseburger Skewers
Makes about 18
1 lb. ground beef (chuck)
2 teaspoons Worcestershire sauce
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
6 slices bacon, cooked and each cut into 3 pieces
6 Brioche buns
5 slices deli-style American cheese slices, each cut into 4 squares
18 (8-inch) wooden skewers
Butter Lettuce Hearts
9 cherry tomatoes, halved
1. Combine ground beef, Worcestershire, salt and pepper. Shape into 18 (1 ½-inch) balls. Arrange in a single layer on a lightly greased baking sheet. Bake at 425 degrees for 15 minutes or until cooked through and centers are no longer pink.
2. While meatballs are baking, prepare bacon according to package directions. Split buns in half. Using a 1 ¾-inch round cutter, cut 3 circles out of the tops and bottoms of each bun.
3. As soon as meatballs come out of the oven, top each with 1 slice American cheese and allow to rest for 5 minutes.
4. Using skewers, place 1 bottom bun round on the skewer, then 1 butter lettuce leaf, 1 meatball with cheese, 1 piece bacon, 1 top bun round, and 1 half cherry tomato. Repeat with remaining skewers and ingredients.
